According to Dr. Deborah Lee, beans are rich in various nutrients, including antioxidants, writes Express. “These antioxidants counteract potentially dangerous molecules called reactive oxygen species (ROS) and prevent them from damaging cells and helping to alleviate inflammation,” she said.

Study 2021 showed that legumes are able to reduce the level of C-reactive protein, which is considered a common marker of inflammation. According to scientists, this effect can be achieved due to fiber, phytonutrients and antioxidants contained in beans. In particular, just one cup of red beans contains 13,727 antioxidants.

In addition, beans are rich in bioactive compounds, including phenolic acid, which can help “stop the production of by-products of inflammatory metabolism,” Lee added.
