So, the expert advised to prepare a French inverted pie with apples for the festive table. According to him, this dish is best cooked in a heat-resistant pan that can be put in the oven. If there is no such pan, then you can use a baking dish, but the taste will be different.

First you need to take 200 g of sugar, melt over low heat until light brown, add 350 g of water and boil down by about half so that there are fairly dense caramel bubbles. Add a cinnamon stick and two or three star anise sprigs.

“While the caramel is boiling, take 10-12 medium-sized red or green apples. We cut them in half, cut out the core and divide each half into 3-4 parts into slices. Then the apples should be put in caramel and boiled for about 10-15 minutes until thickened, stirring occasionally. As a result, 150–200 g of liquid should remain in the pan. Turn off the fire and leave the pan for 10 minutes, and then take out the cinnamon and star anise, ”said Sulima.

During this time, you should make a biscuit of five eggs and seven heaping tablespoons of sugar. The ingredients must be beaten with a mixer at maximum speed until a thick foam and then add seven tablespoons of flour with a slide and knead the mass with a spatula. Optionally, you can use half a teaspoon of baking powder.

“After the dough has become homogeneous, it is necessary to pour it into the middle of the pan, and then it will spread itself around the edges. The most important point is to turn on the oven in advance, otherwise the biscuit will settle while the oven is heating up. The oven can wait for the biscuit, but the biscuit will not wait for the oven,” the chef emphasized.

According to him, the cake should be baked for 50-70 minutes, depending on the size of the dish. If the diameter of the pan is smaller than average, and the biscuit is thicker, then the cake will take longer in the oven.

At the end, it is important to go around the edges of the form with a spatula and turn the pan over, otherwise, when the dessert has cooled, the apples will stick to the bottom and it will be difficult to remove the dish from the dish. In order to turn the cake over gently, you need to take a large plate or baking sheet and press it against the pan. The result is apples on top and dough on the bottom, Sulima explained.
Waldorf salad with apples

Another unusual recipe with apples is the American Waldorf salad. It will require three apples, one celery root, 100 g of baked walnuts, two oranges or four tangerines, cut into slices, 100 g of sour cream, two tablespoons of lemon juice and greens for decoration.

“The ingredients must be washed and peeled, the core of the apples must be cut and, if desired, the skin removed. Cut celery and apples into strips, mix with sour cream, add lemon juice, salt to taste and a pinch of sugar. We put the dish in a pile on a plate, arrange it with roasted nuts, pieces of orange or tangerine, and then decorate with herbs,” the chef described the recipe.
